Celebrating National popcorn day with this Blanton’s Chocolate & Caramel Sauce

Happy New Year my Bourbon friends!

Here we are with the first post of 2017! I can not even begin to tell you how happy I am that I have already accomplished one of my goals! Last year I struggled (several times) trying to make the perfect bourbon caramel sauce. I made several attempts and my results were it was too watery, I burned the sugar, & I even burned my finger from touching the hot sugar (still don’t have a lot of feeling on the finger).

I saw that today was national popcorn day, and what goes great with popcorn? You guessed it caramel & chocolate. So I became more determined than ever that 2017 was going to be my year, the year of the bourbon caramel sauce. I practiced all week to try and get this caramel sauce down, and can I just say #NAILEDIT and I didn’t even burn myself this time!

Tonight to celebrate my victory (and #Nationalpopcornday) I popped some popcorn on the stove, added some cashews and drizzled it with both the chocolate & caramel. Making sure to finish it with Bourbon Barrel FoodsBourbon Smoked Sea Salt” YUM!!!!

I am so excited to share with you my Blanton’s Caramel Sauce, along with my Blanton’s Chocolate Sauce. I hope you enjoy it as much as I did making it. Just remember don’t limit yourself to just putting it on popcorn, get that chocolate & caramel on your favorite sweet treats.

Blanton’s Chocolate Sauce & Blanton's Caramel Sauce

Prep Time: 10 minutes

Cook Time: 45 minutes

Blanton’s Chocolate Sauce & Blanton's Caramel Sauce


  • Blanton's Caramel Sauce
  • 4 C. Sugar
  • 4 1/2 C. Cashew Milk
  • 4 tsp. cornstarch w/ 4 Tbsp. water (for your slurry)
  • 1/3 C. Butter, cold & cut into small pieces
  • 1 1/2 tsp. Kosher Salt
  • 1 Tbsp. Vanilla Extract
  • 7 Tbsp. Blanton's Single Barrel Bourbon
  • Blanton's Chocolate Sauce
  • 1 package Semi-sweet chocolate chips
  • 1/2 C. Cashew Milk
  • 6 Tbsp. Butter & cut into small pieces
  • 2 tsp. Cornstarch & 2 Tbsp. water (for your slurry)
  • 1 tsp. Vanilla Extract
  • 7 Tbsp. Blanton's Single Barrel Bourbon


  1. Blanton's Caramel Sauce
  2. Pour sugar into a 6 to 8 quart pot over med-high heat, stirring the sugar often until its fully melted and a deep amber color. (about 20-25 mins)
  3. Carefully add in the cashew milk, the slurry & butter. The sugar will bubble furiously and the sugar will seize up, so dank panic! Continue to cook & stir while scraping sides of the pan occasionally, until the sugar completely melts again (about 12 mins)
  4. Once the sauce completely melts, remove from the heat, & stir in the salt, vanilla & bourbon to taste. Allow for the caramel to fully cool.
  5. Blanton's Chocolate Sauce
  6. Setup a double boiler- heat water over medium-high. You do not want the water to boil, just simmer. Turn the heat down to med-low, add the chocolate to the glass bowl & place the bowl over the simmering water.
  7. Melt the chocolate, stirring occasionally.
  8. Once the chocolate has melted add in the butter, stir and allow to fully melt. Add in the cashew milk and slurry, stir to combine and allow to cook for 5mins.
  9. Remove from heat, add in Blanton's & vanilla, stir and set aside to cool
