Apple Butter Bourbon Pumpkin Pie (Crustless & Gluten Free)

So you can say I’m a bit late to the holiday party.
Especially since traditionally most people like to eat their pumpkin pie at their
Thanksgiving dinner, and Thanksgiving has already come and gone.
But I will say in my defense, its been known that I’m not the greatest of bakers. And because of that I usually will try and shy away from attempting to bake. I usually cheat and hit the local bakery. This pie though has given me the confidence to try my hand at baking again!
You will think I’m crazy once you make this and see exactly how good this is! You probably will say “How could she say she isn’t a good baker when this is AMAZING!!”

Thanksgiving is spent with friends and family, and this year for me was spent in Nashville.
One of my best friends, Danielle (who happens to be an amazing baker), lives there and i went to visit her & her family. She asked if I wanted some bourbon pumpkin pie and sadly I had to refuse one of my favorite pies since I can’t eat gluten.
She told me this Bourbon Pumpkin pie she made was actually gluten-free!!!!
She had made a bourbon pumpkin pie with out the crust. That equals Gluten-Free for me!
I didn’t know this was even possible! Pumpkin pie with out the crust??
I thought how amazing is this! I usually scoop the pumpkin pie away from the crust anyway. This pie was so good that I couldn’t stop thinking about it for days after I went home.
I just had to attempt to make this!
I was totally impatient waiting for this to cool enough to cut a piece to try it! It was worth it, but should have let it set up just a little bit more before I tore into it. I did notice that the next day when I had a piece of the pie, it was even better! This pie has a lot of complex flavors and like a good bourbon has very distinct tasting notes. When you first bite into the pie you get the subtle sweetness of the apple butter followed by the bourbon, then the pumpkin. Every bite was an explosion of deliciousness!
What better way to celebrate Repeal Day then to try out a new bourbon recipe with the newest bourbon in my collection. On 12/5/1933 the 21st ammendmet had been ratified, which repealed 13 years of prohibition.
Finally you no longer needed a prescription from your doctor to be able to drink! So for the past 82 years on December 5th it has been celebrated as Repeal Day!

Apple Butter Bourbon Pumpkin Pie (Crustless & Gluten Free)

Prep Time: 15 minutes

Cook Time: 40 minutes

Serving Size: 8 people

Apple Butter Bourbon Pumpkin Pie (Crustless & Gluten Free)


  • 1 Cup Apple Butter
  • 1 Cup Canned Pumpkin
  • 1/2 Cup Brown Sugar
  • 1/2 tsp. salt
  • 3/4 tsp. Ground Cinnamon
  • 3/4 tsp. Ground Nutmeg
  • 1/8 tsp. Ground Ginger (I used 1/4 tsp. fresh ginger)
  • 3 Eggs (slightly beaten)
  • 3/4 Cup Evaporated Milk **I used Unsweetened Almond Milk to make this dairy- free as well
  • 4 Tbsp. Bourbon Russel's Reserve 10 year
  • 1 Tbsp. Unsalted Butter Softened UnSalted Butter to grease the pie pan
  • 1 Unbaked 9 inch pie shell (optional)
  • Sweetened Whipped Cream for garnish


  1. Preheat oven to 425 degrees
  2. Combine apple butter , pumpkin, sugar, salt & spices in a bowl
  3. Stir in eggs
  4. Gradually add bourbon, then milk & mix well
  5. Grease the pie dish with the softened butter (if you are going crust less) or place your pie crust into a pie dish
  6. Pour the pie mixture into the greased dish or the pie shell
  7. Bake for about 40 mins or until your pie is set (I was told the pie is set, when you jiggle the pie dish and the middle isn't jiggly)


**Dairy Free/Lactose free option use a vanilla almond milk or cashew milk. You will want to make sure to add 1 Tbsp. of cornstarch to the milk and mix well before you add it to the pie mix.
